This is a 10 inch slicer modeled after the Japanese sujikiki knife used to cut sushi in one motion rather then sawing back and forth. This will perform all slicing tasks well like cutting meat.It is made of 61 Rockwell hardness AEB-L stainless steel. Handel is made of dye-stabilized maple and box elder burl with a black g10 spacer.
