i ended up making 4 k tip chef knifes from 3/32 nitro v stainless steel. it is claimed that adding vanadium to the AEB-L steel will increase edge retention. I wanted to try a different style chef knife here and doing a few at a time helps with efficiency often referred to as working in batches. these are approximately 8 inches long and light in weight for their size. heat treated to a higher hardeness of 63 hrc these should hold an edge very well and be excellent performers in the kitchen.
handle are a more sought after mango wood called “Batik” mango from Indonesia that has been stabilized professionally. small yellow and pearl g10 spacers separate bolster from body of the handle. this knife has a smaller handle excellent for those with smaller hands.
