These are 8 inch chef knives that were a collaboration with Cooking with Clams. They are 8 inches in blade length and overall around 13.5 inches total length. these are made from Nitro V stainless steel and are harder then the other knifes we make at 63 hrc. The increased hardness and added vanadium carbides in these knifes will increase edge retention and performance. handles are made from amboyna burl, brass and African Blackwood.
