This is more of a general knife great for all kitchen tasks. Height at heel or back part of the blade is 1.58 inches. Steel is Nitro-V stainless steel heat treated to 63 hrc ( most knifes in the store are around 50-53 hrc so they sharpen fairly quickly but lose the edge fairly quickly as well). It has been cryogenically treated to increase hardness and edge retention. Handle wood is red dyed maple burl with gray maple burl and white g10 spacers.
