











8 inch Chef Knife
This is more of a santoku style knife great for all kitchen tasks. It has a flatter edge profile, however it will rock chop as it is not as flat as a standard santoku knife. Heel of the knife or back of the blade is 2 inches tall. Steel is AEB-L stainless steel heat treated to 61 hrc ( most knifes in the store are around 50-53 hrc so they sharpen fairly quickly but lose the edge fairly quickly as well). It has been cryogenically treated to increase hardness and edge retention. Handle wood is Bocote which is a naturally oily wood with fair density and blue green (more blue) accent with black g10 spacers.
