This is a 8 inch santoku style knife which is used for many kitchen tasks. This type of chef knife has a flatter edge profile but has enough curve to do rock chopping. It has been heat treated to 61 hrc and cryogenically treated for higher hardness and edge retention. Heel heigh ( height of blade toward the back of knife) is 2 inches. Handle is Cocobolo with an African Blackwood bolster. These handle woods are oily and dense and therefore cannot be stabilized
